I made meal prep earlier in the week but didn’t anticipate the thanksgiving leftovers. Is it still safe to move them from the fridge and just freeze the meal prep instead?

I always freeze my left over prep! No issues!
In general yes. Freezing food never makes it unsafe. However, freezing and then defrosting can damage the texture of some foods, so contemplate how things will defrost when choosing whether to freeze Thanksgiving leftovers vs your meal prep.
