    yeah, definitely steam it fresh. Keeps it from getting mushy and smelly. Also, I just found out about the frozen cauliflower rice from Green Giant. It’s a great option for those lazy days!

    Raw.

    It won’t keep all week so don’t get upset if it’s gross and smells bad on day five

    Blitz and cook a couple of days worth, freeze the rest in ziplocs! Pan fries really well on high heat straight from the freezer with no mushiness.

    Raw, then steam night-of. Otherwise it gets “farty” smelling in the fridge. Also gets mushy.

    Also I just discovered that Green Giant sells large or small bags of frozen cauliflower rice. That’s a great option for me as it’s just a little less work on prep days. Maybe I’m lazy!

    I cook mine with a little bit of oil in a large nonstick ceramic frying pan. I basically toast it, but I also buy the frozen riced cauliflower.

    It usually keeps pretty well this way, and I season at the end with salt, pepper, and cardamom. Still a little worse as leftovers, but better than steaming to me.
