    Breakfast burritos are easy. 12 eggs, 1lb turkey breakfast sausage, green chili or salsa, onion, etc what else you want in. Roll it up on mission burrito size. Makes 6 or 7 depending on portioning.

    Cook oats in stock/broth with onions, garlic, sun-dried tomatoes. Season with salt, pepper, dried herbs as desired. Toward the end, crack an egg or three into it and let those cook. Or, cook the eggs separately and add them at the end. Pour that over chopped greens so the greens cook/wilt as desired.

    Sometimes, just oats in water to cook, stir in some premade Indian sauce (vindaloo, curry, etc) to taste, and any left over meat to warm up.

      Funny you mention this, I have a metric ton of old fashioned oats and I’m the only person in my home that likes them. I want to use them for lunch prep but want a denser protein than eggs at lunchtime. Do you think shredded chicken would do well with this?

      Omg yes, this is so good. You can throw meat, veggies, eggs, whatever in. It’s really tasty and very hearty.

    • Mexican-inspired: Brown rice, black beans, egg, roasted bell pepper, pico de gallo, avocado, sliced radish, cilantro
    • Korean-inspired: Brown rice, egg, pickled daikon, soybean sprouts, sauteed spinach, kimchi, sesame seeds
    • Inspired by stuff that’s normally in my fridge: Quinoa, egg, sauteed kale, sauteed mushrooms, cherry tomatoes, feta

    If you can stomach cottage cheese, I really like a recipe I found on TikTok: cottage cheese, bagel chips, cucumber, tomato, green onion, medium boiled egg, smoked salmon, and everything but the bagel seasoning.

    Very minimal prep: wash and chop vegetables, batch-cook and peel the eggs. I kept all the ingredients separate (except the vegetables) and assembled each morning.

    Another option, which is a bit easier on the stomach and good for chilly weather, is breakfast soup. I make one with chicken broth, bok choy, ginger, garlic and medium-boiled eggs. I store the eggs separately. Each morning, I reheat a portion of broth and ladle it over th egg in my bowl.

    Crockpot breakfast casserole :) feeds an army especially when made into burritos!

    One bag of shredded or cubed potatoes (thawed) One pound cooked breakfast sausage, crumbled 12 eggs, whisked Half a cup of milk Tsp salt tsp pepper, couple shakes of whatever spices you want (garlic powder, onion powder, paprika, cayenne, sage, etc) Top with one pound of freshly shredded sharp cheddar cheese. (Or any mix of cheeses you like) I like to add more black pepper and fresh nutmeg here Layer all the ingredients in the crockpot and cook on high for 4 hours or until the eggs are set in the middle. Delish!

    Savoury oats. I hate the taste of oats normally but I had a pack I needed to finish up. I make it with whatever stock/soup I feel like. Spicy, Tom yam, chicken broth really anything goes. I am using instant oats so I just boil water, put the flavourings and any veggies I have on hand, add the oats, stir it up, crack and egg, stir it in and it’s ready. For meal prep I think you can just prep the veggies just add hot water or microwave it.

    How about fritatta? So many recipes and you can pretty much add anything you have on hand. My Italian dad made it with ground beef but sausage is great too.

    It freezes well too!

    I went to Japan this year and became addicted to onigiri for breakfast. All the convenience stores carried them in the morning and they were nice and filling. I bought a mold for them when I got home but shaping them by hand isn’t bad either. You can fill it with whatever but canned tuna or salmon with kewpie mayo and soy sauce is really easy. Plus, you can eat them cold so less prep. Not sure how they would work with meal prep though (especially if frozen then defrosted) but might be worth a shot since they are cheap to make.

    Scrambled Eggs Tacos (in a flour tortilla). I like scrambled eggs because they are very versatile, you can add many different things. First I add onion to fry in a skillet, then I can add…

    1. green bell pepper (you can also use other colors of bell pepper), a little garlic, and the egg. Then I add salt, pepper, chopped tomato, and at the end hot sauce, or picante sauce, or Mexican sauce (the sauce is optional). You can also add cheddar cheese, or Mexican cheese (queso panel, or queso fresco).

    2. spinach, sliced mushrooms, garlic, and the egg. Then salt, pepper, Basil, or Italian seasoning. at the end you can add Parmesan Cheese, Mozzarella cheese or Feta Cheese

    You can also changed or add different herbs like basil, oregano, thyme, cumin, paprika, dill, mint.

    In the mean time that I cooked the egg, I reheat the flour tortilla. You can also use a hoagie roll in place of the flour tortilla.
